Sourdough Easter Bread using only your Mixer!


It's again this time of the year, where we celebrate Easter. For the catholic people Easter has passed already, but we the orthodox people, are celebrating usually 1 week later.

We do have two traditions - painting Eggs and making Easter Bread, which is the equivalent of the Hot Cross Buns.


To make a Easter Bread is a big Challenge and everyone gets so excited.

Usually the Easter bread is made with Yeast, but in this recipe I will show you how to make it with sourdough starter.

The Process is longer than usual, but it's worthed I promise :)

Before I start i would like to make a small note:

This recipe is quite difficult and it's not suitable to make it with children.


So let's start.

Ingredients for the sweet sourdough starter:


40g starter

80g water

80g flour

45g sugar

To activate the starter pour all ingredients into a clean jar, mix it very well and leave it for 10-12h on 28-30C. I use my Instant Pot to activate all my starters, but if you don't have one you can use the oven. Preheat it on 50C for 10 min and than switch it off and place the starter inside.


Ingredients for the Easter Bread:


500g bread flour

3 Large Eggs

125g milk

the sweet starter

6g salt

150g sugar

10g lemon zest

1 tsp vanilla extract

100g fat ( 50g melted butter and 50g veg oil)


Method


Mix the ready starter with the whole amount of the milk and 150g flour. Leave it for 2-3H until it double its size.

Once the dough it's ready, double its size we need to prepare the rest of the ingredients

Whip the eggs and the sugar together and add it to the ready dough.

I use a mixer.

Slowly add the rest of the flour and mix very well until you have soft but not sticky dough. Once it's ready you can start adding the fat in 3 steps.

Leave the ready dough for 5-6H to double its size again and in the meantime in every 2-3 hours stretch and fold the dough. This procedure will help to form the dough strings .

After this proving your Easter Sourdough Bread dough is ready.

You can form it depends what tin's shape you use it. I put chocolate asa filling, because my children love this combination, but you can use raisins, jam, or just leave it plain.

Now it comes the last poving. This time it's quicker and in 1H the bread should be ready to bake.

Brush it with an Egg wash and bake it in Preheated oven on 175C for around 30-40 min
